INGREDIENTS
Cauliflower Tacos
- Cauliflower
- Avocado
- Shredded red cabbage
- Crispy Shallots
- Coriander
- Lime
- Tortillas
Smokey Chipotle Sauce
- 1 cup cashews
- 1 cup water
- 1 tsp smoked paprika
- 1.5 tsp chipotle
- 2 tsp lime juice
- 1/2 tsp onion powder
- 2 garlic cloves
- 1/2 tsp maple syrup
- 1/2 tsp salt
METHOD
1. Chop cauliflower into florets, season with salt and drizzle with olive oil. Roast in oven on 200°C for 30 minutes. Scoop avocado into a bowl and mash with salt.
2. To make the Smokey Chipotle Sauce, add all ingredients to a blender and blend until smooth.
3. When ready to serve, heat tortillas in the oven for 5 minutes or stove for 30 seconds.
4. Arrange on tortillas with a scoop of avocado, roasted cauliflower, shredded cabbage, a drizzle of sauce and sprinkle with crispy shallots and coriander
5. Enjoy!
